Organic Okuyutaka
This organic sencha is made from only first three leaves and buds harvested in April-May.
This tea has a strong umami like Dashi and a pleasant natural sweetness, almost no astringency or bitterness.
Very mild, yet refreshing Sencha.
Brewing Tips
Amount of Tealeaves: 3g
Water Temperature: 70C (158F)
Amount of Water: 100ml (3.4oz)
Steep: 2-3 minutes
Add more tealeaves to suit your taste.

Okuyutaka has a very mild astringency to it that makes the tea balanced and fresh tasting, without being bitter at all, it’s one of the most balanced senchas i had so far and it is how i imagined a great sencha would be : umami vs fresh subtle astringency . One of my favourites this year along with Asatsuyu.

Very fine sencha with a strong umami on the first brewing (60C°, 1,30 mn). It gives an almost sweet and round taste without bitterness. The second brewing gives something fresh but still gourmand. I like to give it a third brewing for a light and refreshing beverage.
