Autumn Winter Bancha Tea

Autumn Winter Bancha Tea is a very popular type of bancha in Shizuokia prefecture. This tea is produced from tea leaves harvested between late September and early October. This tea is very rich in catechins and produces light yellow color. This bancha has a mild umami and cleanly astringency with a slight nutty flavor. Very refreshing tea, especially good for iced tea.
If you make this tea by cold brew method, it has a slight sweetness, good umami and less astringent taste.

Amount of Tealeaves: 7g
Water Temperature: 80-90C (176-194F)
Amount of Water: 300ml (10oz)
Steep: 1-2 minutes
Add more tealeaves to suit your taste.

    This tea is delicious cold-brewed. The proportions I use (and they seem to work well for me for all types of tea) are 8 g tea leaves/ litre of room-temperature water but you can tweak to your own preference. Refrigerate overnight in a covered jar or pitcher; swirl before pouring, then strain.

    An everyday tea for every occasion. Pleasant when hot (brew in a Kyusu it gives a nice liquor with a light umami), refreshing when cold. It’s as well an interesting choice for beginners before a more complex sencha.
