To cultivate this tea, the tea plant is covered with straw shades to increase the unique sweet aroma. By cultivating under the shade, the contents of Amino Acids (Theanine) and Caffeine are kept at high levels in shoots, but the contents of Flavanols decreases slightly as carbon assimilation of tea leaves is restrained. Sunlight increases the polypenol in tealeaves. So Gyokuro contain less polyphenol than Sencha. The astringent taste of Japanese green tea is attributed to Catechin (Tannin) with complexiation with the Caffeine, and its bitter taste is attributed to Caffeine, while unique natural sweet aroma is attributed to Theanine.
