Gyokuro
Gyokuro is a superior green tea made from fresh buds that are harvested only once a year. To cultivate this tea, the tea plant is covered with straw shades to increase the unique sweet aroma.
By cultivating under the shade, the contents of Amino Acids (Theanine) and Caffeine are kept at high levels in shoots, but the contents of Flavanols decreases slightly as carbon assimilation of tea leaves is restrained.
Sunlight increases the polypenol in tealeaves. So Gyokuro contain less polyphenol than Sencha.
The astringent taste of Japanese green tea is attributed to Catechin (Tannin) with complexiation with the Caffeine, and its bitter taste is attributed to Caffeine, while unique natural sweet aroma is attributed to Theanine. Gyokuro has a wonderful natural sweet aroma which is attributed to Theanine and less astringent taste than Sencha made by light steamed method, and Bancha.

Matcha
Matcha is generally used for Japanese tea ceremony and divided into two classes; "Koicha" (thick tea) and "Usucha" (thin tea).

Koicha creates a sweeter and mellower tea, while Usucha has a lighter and slightly more bitter taste.







How to prepare Usucha (for one person):

1. Pour hot water into the Chawan.
2. Soak Chasen(tea whisk) into the hot water and turn around the Chasen to moisten.
3. Discard the hot water, and wipe inside of the Chawan by Chakin.
4. Put 1 1/2 heaped Chashaku (about 2gram) of Matcha into the Chawan.
5. Pour 60 ml hot water with a temperature of 85 deg C into the Chawan.
6. Hold the Chawan and stir the contents briskly with the Chasen(tea whisk).

How to prepare Koicha (for one person):

1. Pour hot water into the Chawan.
2. Soak Chasen(tea whisk) into the hot water and turn around the Chasen to moisten.
3. Discard the hot water, and wipe inside of the Chawan by Chakin.
4. Put 3 heaped Chashaku (about 4gram) of Matcha into the Chawan.
5. Pour 30 ml hot water with a temperature of 95 deg C into the Chawan.
6. Hold the Chawan and mix the contents up, like kneading which does not produce foam, with the Chasen(tea whisk).
This process should be done quickly to avoid tea temperature becomes too low.
