Green Tea from Yame

Yame is located in southern part of Fukuoka prefecture, Kyushu island.
In Yame-shi, there are many ancient tomb groups, including the Iwatoyama tomb which is an officially-designated historical site, and many important artifact, such as a clay figure, stone people and stone horse.,etc, were excavated. Also, at the Edo period, it prospered as a physical distribution base, and became the center of the economy, culture and traffic of the Yame district.

Legend of Yametsuhime - The name "Yame" derives from a passage in the Nihon Shoki, The Chronicles of Japan, the second oldest book of classical Japanese history: "There is a goddess in this area. Her name is Yametsuhime and she perpetually stays in the mountain."

Green tea of Yame has a long history and very famous for its richness and sweetness, and won the prize of Minister of Agriculture, Forestry and Fisheries at the national green tea show in the year 2005 and 2006.
The production share of Yame is less than 3% of the market of green tea in Japan. But concerning the Gyokuro, the market share of Yame is over 50%.
Ralatively high in temperature during a day, and cold at night specific to inland area, and 1600mm-2400mm rainfall per year are ideal environment for cultivating quality green tea.

Green Tea from Shizuoka

Our Shizuoka teas are produced by "Fukamushi", deep-steaming method, which is the best way to bring out excellent taste. Our tea producer in Shizuoka uses only high quality tea leaves from contract farmers in Haibara-cho, Shizuoka, giving them detailed instructions from soil enrichment to the picking tea leaves. The producer won the Governor's Prizes several times in the "Shizuoka Finishing Tea Fair" and "Tea Tasting Competition." They finish teas with great care, and particularly emphasize on the initial firing that greatly affects the aroma. Depending on the nature of the tea, they use one of three kinds of machines: a traditional "Yokoyama-style firing machine" which they have been using for over 30 years since their grandfather's time, a "steam-sending-air-permeable type dryer," drying tea with a flavor inherent to tea, and the latest "microwave far-infrared radiation firing machine." Please enjoy the harmonious delicious tea that combines the richness inherent to deep-steamed tea, the sweet and astringent tastes.

Green Tea from Uji, Kyoto

Chemical-free and organic tea grown by farmers with the Artisan Spirit in Uji, Kyoto, one of the most famous tea growing regions in Japan.

My determination fifteen years ago:

matcha - powdered green teaI used to grow tea in a standard manner, but suddenly fifteen years ago, I made up my mind to grow chemical-free and organic tea. At that time, nobody thought about doing such a thing. Everyone was surprised at my decision and tried to persuade me to change my mind. As soon as I stopped using chemicals, bugs began to eat the tealeaves. The tea did not grow as well as it used to and I could not grow it as merchandise. This situation continued for about three years. Making my living as a plasterer and a carpenter, I continuously made efforts to reform soil. People around me as well as my family worried about me, but things gradually turned for the better. I studied hard by myself. I became one of the founding members of the Japan Organic & Natural Foods Association (JONA), and was in a position to lead organic and chemical-free farming methods. We gradually began to start grow high-quality tea about ten years ago. Of course, we still had problems concerning worm damage and taste deterioration, but for the last few years, we could adequately compete with tea grown in a standard manner in quality and yield. The soil has turned to its natural conditions and the tea has revived its inherent resisting power. As a result of my efforts with an indescribable support of my family, We won the first prize in an agricultural fair in which standard-grown tea also competed.
